Chief reason to visit: Criterión is the flagship in the famous Rausch brothers’ vast Colombia-wide restaurant empire, whose most recent addition is Local by Rausch, in Bogotá. With an extensive à la carte and two tasting menus, the brothers – Jorge, the executive chef and Mark, the pastry chef – showcase some of their trademark creations.
A few words on the chefs: Mark and Jorge are celebrities in Colombia, with Jorge serving as a judge on the local version of MasterChef. Their great-grandparents founded a bakery in Bogotá after arriving from Poland, and the brothers inherited the family passion for cooking. They’ve also penned a host of cookbooks, which sit proudly on the restaurant’s bookshelves.
What’s in the name? Criterión was named after the London theatre of the same name – Jorge spent several years in the UK working with Raymond Blanc at Le Manoir au Quat' Saisons, where he developed his skills with French food.
Typical dishes: The seasonal tasting menu could include a teacup of pea soup with onion cappuccino, raw lion fish strips with soursop foam, or an Austrian-inspired desconstructed emmenthal and pumpernickel bread sandwich.
