Scandinavian connections in ultra-isolated location
Is this the most isolated great restaurant on the planet? Fäviken is surrounded by a 20,000-acre estate half-way up mainland Sweden on the same latitude as Iceland. Magnus Nilsson is a master forager and exponent of only using local produce: virtually no foodstuffs are imported except sugar, salt and vinegar. This is food without frills – Nilsson would rather create everything on the day than rely on vacuum-packed or pre-prepared produce.
