What's in a name? Les Amis, the French translation of 'friends', is the sophisticated original restaurant of the Les Amis Group. In the 1990s, there was a dearth of independent fine-dining restaurants in Singapore, but on opening in 1994, Les Amis filled the void and has grown to become an emblematic French restaurant in the city-state.
In the kitchen: Sebastien Lepinoy moved from Hong Kong to take over the kitchen in 2013, having spent a total of 17 years with Joël Robuchon before he joined the Les Amis group. Upon joining, he immediately began shaking things up by decreasing menu prices by 40 per cent and convincing the owners to gut the kitchen layout in favour of a custom-made Charvet cooking suite.
What's on the menu? Current tasting menu dishes include blue lobster salpicon with a velouté of oyster jus and tapioca; black forest venison with truffle and juniper berries served alongside grapefruit compote; and a selection of petits fours comprised of canelé, mont blanc and palmier.
Service to match: The restaurant, winner of the Art of Hospitality Award in 2020, is a practitioner of guest-forward thinking. Diners are welcomed with the finest white-gloved hospitality and every server – of cheese, truffles and caviar – has an exceptional knowledge in their respective field.
