Humble beginnings: Odette is a modern French restaurant founded by chef Julien Royer in 2015. Coming from a family of farmers, Royer cares deeply about produce, sourcing ingredients from artisanal producers in Asia and Europe and treating them carefully to highlight their purest flavour.

What's the inspiration? Odette is Royer's gastronomic love letter to his grandmother of the same name. She taught him to highlight ingredients and add that je ne sais quoi to his dishes that blows diners' minds and brings happiness to their hearts. Demonstrating love through food and devotion to people are the cornerstones of the Odette experience.

French DNA with Asian influence: The latest menu at Odette is a culmination of work over the last decade. It's based on French cuisine, but the Asian influence is also evident in many of the dishes. Guests choose between the Terre & Mer (lunch only), Epicure and vegetarian Nature & Découverte menus. While classic Odette dishes, such as the kampot pepper-crusted pigeon and Jeju abalone and foie gras duo remain, future classics have joined the menu. This includes Hokkaido botan ebi, a yuzu-kosho–glazed spot prawn on dashi jelly and crème fraîche, crowned with Maison Kaviari caviar, yuzu and apple; and Crab Contrast, with a slow-cooked piece of Norwegian king crab accompanied by a petite chilli crab bun.

Art in and from the kitchen: Odette went through a renovation in 2025, with interior designer Sacha Leong and artist Dawn Ng reimagining the space. Stepping inside might feel like entering another exhibition at the National Gallery, where it's located. An installation of paper structures drawing from Royer's palette of petal, leaf, fruit and root hangs from the ceiling – a permanent piece of art by Ng named Winter, Spring, Summer or Fall.
