What’s the hype? Making its debut in Asia’s 50 Best Restaurants in 2023 after opening in 2020, Ms. Maria & Mr Singh is a vibesy, casual Indian-meets-Mexican restaurant from the one and only Gaggan Anand, chef-owner of the eponymous restaurant that topped the list from 2015 to 2018. The restaurant moved to a new location in March 2023, with a chef’s table space and a bustling open kitchen run by Anand's right hand, chef Rydo Anton.

What to expect: As with all Anand’s ventures, Ms. Maria & Mr. Singh serves flavour and spice alongside a heavy dose of fun and funk. Head chefs Hernán Crispín Villalva and Roshan Kumar present a twist on classic, home-style dishes inspired by the foods of Oaxaca, Mexico, and Jodhpur, India, paired with natural wines and cocktails such as the twist on Tepache, a homemade kombucha with pineapple and rum.

Songs and lyrics: On an à la carte menu split into music- and popular culture-inspired sections, the ‘Love at First Bite’ snacks include ceviche and guacamole, while the fusion taco menu includes pulled pork vindaloo in flour tortillas. ‘For wedding and maybe a funeral’ features the British-Indian-inspired chicken tikka masala, as well as Gaggan’s crab curry and ‘Mom’s spinach and paneer’ – with avocado thrown in, for good measure. Desserts include churros and a mango yuzu snowball.

The decor: India meets Mexico in the best of ways in this vibrant dining room decorated in pastel blue and neon pink. U-shaped booths are decorated with Mexican ‘Day of the Dead’ skeletons, while a neon sign reads ‘Love should never be mild,’ reflecting Anand’s inimitable lust for life.
