To Infinity & Beyond is a cosmic expedition through the universe of flavours, textures, and innovative mixology. Opened in December 2019, the venue takes inspiration from the realms of space and science to create a drinking experience that is as imaginative as it is delicious. The ethos of the bar revolves around the idea that each cocktail is a small universe, filled with endless possibilities waiting to be explored. 

The team, led by 2021 World Class Taiwan Bartender of the Year, Mars Chang, infuses a scientific approach into their craft, utilising advanced techniques such as distillation and centrifugation to extract flavours and create liquid art that is at once layered and complex. The result is a menu that transcends traditional cocktail categories, focusing instead on textural differences: creaminess, clarification, and carbonation – classifications that allow consumers to easily understand contemporary cocktails.

The atmosphere at To Infinity & Beyond further enhances this adventurous spirit, evoking a sense of escapism from Earth's orbit (and life's pressures that go along with it). Upon entering through space-themed automatic doors, guests are transported into a futuristic setting akin to stepping aboard a spaceship. The décor is equal parts sleek and psychedelic, with a layout that encourages interaction.

Signature sippers, such as (EARTH)²⁰²⁵ encapsulate the primal essence of Mother Earth via ingredients like pine needles, pink peppercorns, and woody palo santo to mirror the natural elements of soil and forest. Otherworldly Σ(stars) = GALAXY sees backlit ingredients like red guava and jasmine-scented tea, mimicking the cosmos in visual aesthetic. A new entry to the list in 2025, To Infinity & Beyond is continuously reimagining Taipei's cocktail culture, making it a must-visit destination for both cocktail buffs and beginners alike.
