Everyone knows that ice is one of the key ingredients in building a cocktail. But for Edinburgh's Panda & Sons, stressing that importance goes far beyond the shape, size and clarity of the cubes arranged in a glass.

The culmination of more than five years of sub-zero research inside its basement laboratory, affectionately dubbed the Brain Melting Society, Transcend 2.0 is a masterclass in the previously uncharted territory of extreme-low-temperature flavour extraction, masterminded by the bar's visionary founder Iain McPherson.

Despite the scientific methodologies behind each drink, Transcend 2.0 manifests as an approachable, beautifully illustrated narrative split into distinct chapters, with each section highlighting a proprietary freezing technique pioneered by McPherson, and engineered to isolate, elevate and intensify seasonal flavours without the degrading, oxidative effects of heat.

In the first chapter, the menu focuses on 'Switching', a method invented by McPherson in 2019 using ultra-low freezers to extract the natural water from spirits to replace it with a flavour-rich alternative. This yields its signature Coconut Daiquiri, a crystal-clear marvel where the water in white rum is seamlessly swapped for rich Thai coconut milk. Next, 'Sous Pression' serves as a sub-zero alternative to sous-vide; cocktails like the grape-forward Sability are batched inside high-pressure stainless-steel kegs, forcing the expanding ice to marry the ingredients into an ultra-velvety profile.

The journey continues through 'Freeze-Drying' – the art of preserving fresh botanical structures to supercharge drinks like the apple and pea shoot-infused Sharpshooter – before concluding with 'Cryo-Concentration'. Here, moisture is frozen out to concentrate sugars, mimicking an optimal state of fruit ripening, best experienced in the effervescent, peach-and-jasmine-laced Girvana.
