Homegrown, seasonal gem in the heart of Madrid
Tucked away just off Madrid's Gran Vía, Angelita is a family-run establishment where brothers David and Mario Villalón have bridged the gap between the vineyard, the kitchen, and the shaker. The venue is divided into three spaces, with the dining room and the wine bar on the ground floor and the cocktail bar downstairs. As the venue celebrates its tenth anniversary in 2026, it continues to champion a rigorous farm-to-glass philosophy. Much of the produce is harvested directly from the family's own garden in Zamora, ensuring both the food and the cocktails are deeply rooted in the local terroir.
In the basement bar, the team turns unconventional ingredients such as Jerusalem artichokes and chicken skins into cocktail staples through techniques old and new, from low-temperature distillation to koji fermentation. Since the bar doubles as the prep space, the sensation of being in a lab is unavoidable and is only strengthened by the fact that all cocktails are weighed and that Angelita uses neither ice, preferring flavoured dilution, nor citrus, which cannot grow in their garden. Many drinks also feature their own line of ultra local spirits and non-alcoholic mixers. The Raíces menu marks this decade of innovation with 14 new creations that challenge the senses. The Dry Sbagliato is a technical marvel, utilising a solid 'negroni powder' that is reconstituted with dry sparkling wine to create a drink of great aromatic depth. Guests should also not miss Angelita's iconic Bloody Mary, featuring the hyper-seasonal essence of their home-grown tomatoes.
