Storied cocktail destination with Florentine flavours at the fore

Set inside a restored Renaissance palazzo in Florence's historic centre, Locale Firenze has built its reputation on the contrast between centuries old architecture and a forward looking cocktail programme. Guests move through frescoed rooms, stone staircases and a courtyard lounge before reaching the main cocktail counter, creating an experience shaped as much by atmosphere as by the drinks themselves. The venue operates across multiple levels of hospitality, combining restaurant, lounge and cocktail bar within a historic Florentine setting that remains remarkably contemporary in execution.

The cocktail programme, led by Fabio Fanni, combines modernist techniques with traditional Italian methods, often using distillation, infusion and low waste practices to reinterpret familiar flavours. Menus remain concise and tightly edited, avoiding unnecessary complexity while still allowing room for experimentation through texture, aroma and seasonal ingredients. Its current menu explores the nuance of Italian hand gestures through drinks like the Fumare – illustrated with the universal gesture for "do you have a cigarette?" (gin, basil, mint, hemp, lemon) – and the Vieni Qui! (Come Here!) made with cognac, black pear, beetroot and lemon. 

Despite the technical foundation, the drinks remain highly approachable, supported by a service style that guides guests without overwhelming them with detail. Locale Firenze's success lies in this balance between research and restraint, delivering cocktails that feel progressive while remaining grounded in the rhythm and character of Florence itself.
