A subterranean tropical getaway in New Mexico

Hidden beneath a café in Albuquerque's Nob Hill district, Daydream Rum Bar is less a conventional cocktail venue than a carefully staged act of escapism. Accessed through a discreet door and a staircase descending below street level, the bar unfolds like a secret cabin tucked inside the hull of a ship – in essence, a cocktail oasis in the middle of a landlocked desert.

Architecturally drawn up by Formative and designed and built by Fox MFG, the project transforms what was once a utilitarian basement into a deliberately immersive environment. The design brief treated the subterranean constraints – low ceilings, compact footprint and structural limitations – not as obstacles but as cues for intimacy. 

The material space is thoughtful in its execution of both hard and soft furnishings – think rich mahogany walls, custom woodwork and velvet-clad booths in jewel tones, all deliberately chosen to evoke the vibe of mid-century rum lounges and maritime interiors. The bar itself stands as a focal point and social anchor. The space is deliberately dense: every surface appears crafted, layered or cleverly illuminated. And speaking of lights, the ones here are oyster-shaped, holding the bulbs like pearls. Neon is used sparingly, casting modern shades on what could initially appear a traditional environment.

The aesthetic is bolstered by a unique array of art, curated by the bar's founder Isaac Fox through collaborations with local artists and friends. Inside, guests will find a wall of hand-cast plaster reliefs revealing a single, mystical ocean vista scene by Josh Vaive. The backbar is crowned with another signature – a soothing coastal painting by Fox's mother.

Conceptually, the design labels itself as a "Mediterranean cruise liner lost to time," merging tiki nostalgia with a subtle nautical aesthetic. Tropical references appear not as kitsch but as suggestion: murals, island-toned palettes and maritime cues that echo the bar's rum-focused cocktail programme.

In transforming a forgotten basement into a theatrical escape that manages to be warm, cinematic and slightly surreal all at once, the team behind it has created a truly dreamy space, making it a worthy winner of the SevenRooms Best Bar Design Award as part of North America's 50 Best Bars 2026.
