Given its dedication to seasonal ingredients farmed and foraged in Toronto's greenbelt, many of the cocktails on the menu at Pompette are ephemeral, but you can always count on its five staple signatures. House drinks include the Cornichon, a riff on a martini with a splash of pickle distillate, as well as the bar's greatest hits, such as a scrumptious silky and nutty Nitro Colada as well as a legendary hot serve: the smoky Paloma Quemada. Everything else is pretty much only available while supplies last, so don't put off ordering drinks like the spicy Breakfast at Tommy's, a margarita variant supercharged with birria distillate and bitter orange, finished with coriander dust. It's worth noting that people who prefer a glass of wine are equally spoiled for choice at this charming bar.
