Despite the classic French character and neighbourhood bistro feel, the backbone of the drinks programme at Bar Pompette is an enthusiastic and exhaustive commitment to locavorism. Tight partnerships with regional farmers make it possible for the team at this cherished cocktail destination to showcase Ontario terroir in painstakingly perfected cocktails served up with grace and warmth in a cosy, walk-in-only space that’s something of a sanctuary in Toronto’s busy Little Italy.

Given its dedication to seasonal ingredients farmed and foraged in Toronto’s greenbelt, many of the cocktails on the menu at Pompette are ephemeral, but you can always count on its five staple signatures. House drinks include the Cornichon, a riff on a martini with a splash of pickle distillate, as well as the bar’s greatest hits, such as a scrumptious silky and nutty Nitro Colada as well as a legendary hot serve: the smoky Paloma Quemada. Everything else is pretty much only available while supplies last, so don’t put off ordering drinks like the creamy and elegant Oh La Vache, made with pawpaw, an obscure cold-climate fruit with tropical notes. At last check, forced rhubarb was scheduled to reappear on the list in It’s Pink!, a riff on the white Negroni, and the Golden Light (wild fennel and bee pollen in a Daisy-type drink), was making a comeback. It’s worth noting that people who like to mix it up with an occasional glass of wine are spoiled for choice at this charming bar.
