Scientific laboratory tech meets classic southern hospitality at Houston's hot spot Bandista. Deep within the downtown Four Seasons Hotel, the chic lounge is hidden behind a nondescript bookcase. Inside, a mix of local cocktailians and visiting VIPs experience a unique take on the classic speakeasy. Yes, touches of Art Deco invoke the expected 1920's vibes and the exclusive space oozes Gatsby. However, the focus here is on tequileros and Prohibition's oft overlooked smuggling routes along the US-Mexican border. 

Despite the historical influences and a bevy of vintage glasses, the drinks are undeniably contemporary. Beverage director Johnathon Jones leans into advanced lab techniques to conjure creations like made-to-order 'dipping dots' that accompany the Menage a Trois (cognac, creme de cacao, coffee liqueur, local cream, cacao butter). True to concept, the list also provides a host of agave forward options like the Almost Famous (mezcal, roasted pineapple, Mexican tea-infused génépy, Japanese amaro); the final ingredient, paparazzi, manifests as a bartender wielding a Polaroid camera. Bandista's enthusiastic team carefully balance a serious programme with such lighter fun touches. Whether guests are perusing their extensive spirits list or learning about vacuum distillation, the Bandista experience is grounded in deep knowledge, but ultimately offers an expression of joy.
