Takuma Watanabe earned a devout following helming the bar programme at New York City's legendary Angel's Share. After the beloved speakeasy's original location closed in 2022, Watanabe opened Martiny's, an homage to the drinking cultures of his Tokyo birthplace as well as his Manhattan home. Occupying a carriage house in Gramercy, once owned by artist Philip Martiny, the three-storey lounge is a temple to luxury.

Omotenashi, the Japanese concept of selfless hospitality, drives the experience. Guests are greeted with a warm oshibori towel and perfectly mixed drinks arrive in Kimura crystal. Martiny's eight step menu is ordered into suggested courses, akin to an omakase menu. The emphasis is on variations of Golden Age classics kicked up with premium spirits and immaculate presentation, best experienced through the ruby-hued Grand Martiny: a balance of gin, sherry, port, cognac and elderflower liqueur. When it comes to bar bites, offerings are light, but immaculate. Think wagyu tartare with XO sauce and shio kombu on fluffy milk toast, or Scotch 'Japanese' Eggs, where an ajitama soy-marinated egg comes wrapped in tsukune sausage to be dipped in a yakitori tare. Whether snacking or sipping, Martiny's delivers an opulent experience.
