If these 1927 walls could talk, they'd whisper as you glide down the mirrored stairwell below the Rosewood Hotel Georgia, a Vancouver landmark where royalty, stars and rockers have rubbed shoulders for a century. A former beer hall and techno club, this sexy, subterranean space is now a cocktail den with serious drinks and exuberant atmosphere. Good vibes and gracious service are hallmarks of beverage director Jeff Savage, who was named World Class Canada Bartender of the Year in 2019.

On weeknights, Prophecy can clinch date night or close a deal, with cocktails like Souvenir 26 (a smoked hay- and beeswax-washed rye drink nested inside a matryoshka stacking doll) serving as conversation pieces at the glowing onyx bar. The expansive space (including a plush VIP) grows big and buzzy when operating at high volume on weekends. Live music and DJs, plus an ever-changing gallery of digital art, set the mood for a Cavalier Martini with accompanying caviar service, or order a porrón of classic cocktails plus A5 Wagyu Katsu Sandos and truffle fries for the table. House-made Prophecy Kola and well-crafted mocktails like the Angel's Share complete the beautifully illustrated, colour-coded menu: a flavour legend helpfully plots each drink on a matrix from Refreshing to Spiritous, and from Lush to Herbaceous.
