Viceversa signifies a swapped order. At this Miami destination, Italian expat Valentino Longo mashes up the refined hospitality of his homeland with the joyful exuberance of the Florida coast. An illuminated crescent backbar fuses Miami's signature decor with Italian futurism. The room's velvet green, marble tables and cherrywood trim conjure Longo's Roman youth; the stylish crowd would be at home in a Fellini film. However, Viceversa's inspiration is a different Italian artist, Fortunato Depero. His 1920's style of vibrant colours and fractured geometry decorate the wall, menus and even the cocktails themselves.

The menu is grounded in the Futurists' 'Polibibita' philosophy of cocktails that present unexpected, contrasting flavours, along with playful visuals. Such combinations are presented in creations like Little Tonico (white port, elderflower liqueur, sherry, olive brine, Mediterranean tonic) and the Forza! (bourbon, bergamot, vermouth, blackcurrant). Valentino pays homage to his roots with a wide selection of negroni riffs, vermouths, sherry and amari. Apertivo also drives chef Justin Flit's acclaimed culinary menu of shareable plates. Flit leans on simple, flavourful preparations of immaculately sourced, fresh ingredients. The raw bar is popular, boasting several types of oyster alongside preparations like bluefin tuna with scallion broth and tomatillo. Rounding out the Italian angle, the kitchen's pizzas rank among the state's best. But, the pizzas rotate seasonally because at Viceversa, the only certainties are elite hospitality and a surprise to the taste buds.
