Art-inspired bar and elegant cocktails by an Industry Icon

Tucked away in Paris's vibrant Marais district, Bar Nouveau was co-founded by twins Sara and Hadrien Moudoulaud, Marc Puzzuoli, and the recipient of the Industry Icon Award in 2021 Rémy Savage. Passionate about the arts, Savage and the team built their bar around the famous Art Nouveau movement.

The decor is meticulously crafted to transport guests to a bygone era. The bar is home to the world's largest private collection of antique Bimini glasses, and custom light fixtures echo the movement's embrace of natural forms. The space is split between two distinct levels: the ground floor reimagines an Art Nouveau bar from 130 years ago with a bright, airy feel, while the darker, more intimate downstairs area with its exposed brick brings a futuristic twist, exploring the relationship between nature and the post-technological world.

This duality extends to the cocktail programme. The tightly curated menu of six cocktails is a masterclass in elegant simplicity, offering modern interpretations of classic drinks, including lesser-known French bistro classics. The upstairs menu focuses on pre-industrial techniques, while the downstairs menu utilises modern technology to create drinks with a different personality. This unique approach, combined with the bar's stunning aesthetic, has turned Bar Nouveau into an in-demand destination. It's a diminutive space and doesn't take reservations, but the bar opens at 3pm so it's a good idea to arrive early to score one of the city's most coveted seats.
