Opening in April 2021 and billed as the world’s first permanent no-waste bar, Re is the Sydney newcomer from UK-expat Matt Whiley. Whiley, whose high-flying London bar Scout was closed due to the impact of the pandemic in 2021, has assembled a strong team led by the award-winning Evan Stroeve (ex-Bulletin Place) and Jake Down (ex-Scout). Underpinning everything is an ethos of reusing, recycling, and regenerating – and this leads to some very delicious things.
Re makes use of produce that would otherwise be destined for landfill; this isn’t garbage, however, it’s fruit and vegetables that are at their optimum in terms of freshness and flavour, it’s just that they are either cosmetically blemished or unwanted stock. Whiley and the team take that produce, process it and put it to delicious use on their drink list, serving up cocktails that have had the city – and soon the world – talking. These sustainable credentials see Re win the Ketel One Sustainable Bar Award 2021, following an assessment by Food Made Good, 50 Best's sustainability audit partner.
