An immersive cocktail journey from two of the world's best

Opened in 2021 and named The World's Best Bar in 2023, Sips continues its reign as a top destination for cocktail innovation. Its success is the result of decades of experience: the bar is the brainchild of two legends in their fields. Since his time at Artesian, Simone Caporale has been at the helm of bars that have achieved the top spot on The World's 50 Best Bars list five times, while Marc Álvarez honed his craft for more than 10 years with the Adria brothers of El Bulli fame.

The bar's island design, which deliberately eschews expectations for what a bar should look like, remains as eye-catching as ever. Drinks are a spectacle in themselves, showcasing intricate presentation and bold flavors. The Nixtamil is an experience: a red fruit reduction is licked from a small mirror, preparing the palate for a mixture of bourbon and corn and miso distillate. Sips is also well-known for its playfulness with classics: their Tommy's adds strawberry and yellow aji.

Never content to stand still, the duo launched a bar within a bar called Esencia. With seating for just 14 patrons, Esencia offers a tasting menu of intricately curated 'sips,' exploring the limits of liquid creativity. This intimate, multi-sensory journey allows guests to experience the bar's most experimental creations. This latest innovation has kept the bar at the forefront of the cocktail world, ensuring it remains a must-visit for enthusiasts seeking the next level of drinking.
