El Papagayo

Cordóba, Argentina

El Papagayo – translating as The Parrot – is one of the most intriguing dining rooms we've come across. 2m wide and 32m long, it's a repurposed alley between two nineteenth century buildings that has been repurposed into a spectacular split-level restaurant with a sculpted flock of birds hanging over diners' heads. There are only 36 seats and, as befits the room, an innovative 12-course tasting menu takes centre stage prepared by Argentinian chef, Javier Rodriguez, whose Córdoba-centric empire includes a number of luxurious suites for diners wishing to make a real night of it. Provenance is key to his ethos with regional wine and ingredients creating dishes that take inspiration from home and away. For example, try a twist on an Argentinian pork Bondiola sandwich served with green grapes and almonds or a dessert of croissant ice cream, strawberries and frangipane cream.
