A country cottage on a back road is an unusual setting for one of Australia’s top restaurants, yet Brae (an old Scottish word for hillside) has been a regular on the World’s 50 Best list for years. Owner Dan Hunter has brought an obsession with a sense of place – learned from his time as head chef at world-renowned restaurant Mugaritz – to his first solo venture. Constantly evolving set menus centre around ingredients grown on the restaurant’s organic farm, with an olive grove, free-range chickens and bee hives on site. You can even spend the night in one of six stylish suites.
