A country cottage on a back road is an unusual setting for one of Australia’s top restaurants, yet Brae (an old Scottish word for hillside) is up there. Owner Dan Hunter has brought an obsession with a sense of place – learned from his time as head chef at world-renowned restaurant Mugaritz – to his first solo venture. Constantly evolving set menus centre around ingredients grown on the restaurant’s organic farm, with an olive grove and bee hives on site. You can even spend the night in one of six carbon-netural suites.
