Pull a Tasmanian-oak stool up to the bar to see chef Josh Lewis – formerly sous chef at Loam in Victoria's Bellarine Peninsula – crafting sophisticated small-plates that focus on a single primary ingredient, such as a Ballina king prawn, dissected and roasted in black garlic oil.
