Artist Allan Wolf-Tasker and his chef wife Alla had a dream: to transform an overgrown plot of land on the shores of picturesque Lake Daylesford into a 40-seat weekend restaurant. In 1984, they threw open the doors, and fast forward four decades, with Alla still very much involved and a passionate team alongside her, the ethos remains the same – fine dining, local produce, seasonality, great service. Though now there are studios, suites and villas set amongst the six acres of country-style gardens, as well as a tennis court, solar-heated infinity pool, hot tub, sauna and spa. Locality is woven through the accommodation, with custom hand-crafted furnishings and original artworks on the walls, and many rooms come with pleasing lakeside views. If yours doesn’t, take a pew on one of the waterfront terraces to witness the kookaburras and cockatoos going about their evening preening as you sip your wine. The restaurant continues to take centre stage, serving dishes that showcase farm-to-table dining, with produce from the Lake House’s own farm down the road. There’s also an olive grove, orchard, bee hives and a vineyard.
