The Tasman architects had to navigate strict rules as they painstakingly linked up an elegant 1940s Art Deco pad and a former 19th-century hospital to a third, brand new building – gleaming Pavilion edifice – while building this Tasmanian pad. It was time well spent: this trio of conjoined properties has become a first-of-its-kind landmark in the city, with first-class dining options. This includes the 190-seat, olive tree-dotted Peppina’s, offering up classic Italian cuisine with a tiptop Tasmanian twist. Sat in Hobart’s historic centre – with walkable access to the MONA ferry terminal – the hotel is a textural explosion of era-hopping design. Book a Pavilion suite for contemporary elegance with easy access to a water-gazing hotel terrace, or a room in the Art Deco wedge for a design-led den with voluptuous curves and geometric angles. Heritage rooms, meanwhile, offer views of the city’s St David’s Park, high ceilings and – for some – original fireplaces. Downstairs, the Mary Mary speakeasy has become a much-loved local favourite, where you can enjoy a crafted cocktail infused with island flora.
