A destination restaurant deserves a fitting companion in lodgings. So, Chef Craig Will’s Aussie legend, Stillwater added Seven Rooms to their impressive temple of Tasmanian culture. Seven Rooms is not a traditional hotel as much as a collection of luxe suites located above the restaurant in a 180-year-old flour mill. In lieu of bellmen, porters and such guests are greeted like old friends, freshly baked sourdough bread and welcome drinks are frequent and delicious. An alcove houses a small, communal sitting area and self service bar brimming with spirits, wines, premixed cocktails and snacks of every variety. The suites aim to manifest the spirit of Tasmania through blackened woods and large, exposed timber beams offsetting picturesque views of the Tamar River. The renowned minibars tout a compliment of libations and a cupboard stuffed full of local treats including cheeses and butter. Of course, the onsite dining is the main attraction. An institution for over two decades, Stillwater crafts hyperlocally sourced ingredients into Modern Australian cuisine worthy of the kitchen’s many devotees from afar.
