Jackalope Hotel

Merricks North, Australia

Hospitality prodigy Louis Li opened the Jackalope to great acclaim in 2017. There’s little surprise that the Victoria property was an instant classic given Li’s masterful blend of vineyard, culinary destination, art space and luxury hotel. Arriving at the hotel, guests pass through rows of perfectly trellised vines before catching sight of Emily Floyd’s 7-metre-tall sculpture of the titular jackalope. The art collection at his 27-acre property is unique in the curatorial team’s devotion to large-scale works and installations. Consider itscelebrated showing of Random International's Rain Room, a ‘100 square metre field of continuous rain'. The aesthetic focus continues in the design by architecture firm Carr. A historic, red-brick farmhouse partners with an angular, contemporary structure housing the 45 rooms and suites. Massive windows provide sweeping views of the flora and fauna. In the bathrooms, enjoy in-floor heating, soak tubs, rainfall showers and toiletries made from grape skins by the hip Hunter Lab. For more grapes, be sure to check out casual eatery Rare Hare or Flaggerdoot, the cocktail bar, on the property. However, the culinary king is Doot Doot Doot, where terroir driven tasting menus are served beneath a 10,000 light moving chandelier.
