A love letter to Tasmanian produce in a former mental asylum filled with natural light. The spin-off of Australia’s top cookery school is as wholesome as the original. Co-founders Rodney Dunn and Séverine Demanet’s menus showcase their trademark dedication to hyper-local ingredients with chef Stephen Peak at the helm. Wood grilling, fermenting and pickling all play their part, but pared-back dishes such as raw tomatoes with a lick of anchovy sauce ensure it’s the produce that takes centre stage. Interesting Tasmanian craft beers and an all-Aussie wine list go one step further in crafting a delicious sense of place.
