Founded by former owner of acclaimed bar Scout in London, Matt Whiley, it claims to be the world’s first no-waste bar. Named as one of The World’s 50 Best Bars in 2022, as well as its ecological efforts earning it the Sustainable Bar Award in 2021, it’s clearly more than just a gimmick. Its latest Nothing Wasted menu offers creations like the Ultra Violet – made with foraged herbs, gin, rose geranium, Egyptian ice tea, vanilla, pickled rhubarb and Italian orange bitters – alongside a selection of juiced-up classics, such as its Dirty Old Fashioned, supercharged with tartar and umami vermouth.
