Beyond Salzburg’s bustle lies the picture-postcard town of Golling. At its heart is the Döellerers empire, a family run consortium of restaurants and delis that’s been around for a century. Döllerers Genießerrestaurant is its flagship offering. Here, chef Andreas Döllerer draws inspiration from his surrounds (the Bluntau Valley for fish; Pinzgau for meat), combining traditional and modern techniques to inform a new-style Alpine cuisine. Dishes might include brown trout with mountain juniper oil and sour red cabbage or Alpine scallop with self-fermented garlic. Meanwhile, the space speaks the international language of the epicure – starched linens, delicate artwork and a terrace with sweeping views.
