Beyond Salzburg's bustle lies the picture-postcard town of Golling. At its heart is the Döllerers empire, a family-run consortium of restaurants and delis that's been around for a century. The Döllerers Restaurant is the award-winning flagship offering, set in the Original Building, where on the first floor they also host cooking courses and wine workshops. Chef Andreas Döllerer draws inspiration from his surrounds (the Bluntau Valley for fish; Pinzgau for meat), combining traditional and modern techniques to inform a new-style Alpine cuisine across the set lunch menu and a longer, more complex tasting menu. Dishes might include red beet baked in glacier sand; brown trout with mountain juniper oil and sour red cabbage; or Alpine scallop with beef marrow cream. Meanwhile, the space speaks the international language of the epicure – starched linens, delicate artwork and a terrace with sweeping views. Service from the dirndl-wearing staff is immaculate.
