Rather than follow the crowds, this bar in Austria’s sporty mountain city of Innsbruck moves to its own beat. Working closely with regional growers and with a sustainable ethos, it specializes in fermentation, fruit wines and fruit vermouths; three things that, in the wrong hands, could result in seriously dire drinks. But thankfully the bar more than knows what it’s doing and instead you get the likes of perfectly balanced Mezcaloni – homemade clementine bitters, homemade peach vermouth and mezcal – or a Singapore Sling ‘Dunlin Style’ with gin, pineapple, cherry, herbs, citrus, fruit leather and a milk clarification. Local wines, beers and spirits also grace the list for those feeling less fruity, and snacks ranging from a cheesy mortadella sandwich with sun-dried tomatoes and pickles to fries with truffle mayo and a duo of mustards soak everything up.
