Sidestep Vienna’s café culture and wind west through the bucolic Wachau Valley to the pastoral delights of Landhaus Bacher. Once beloved for its fried chicken, it gained gastronomic powerhouse status when chef Lisl Wagner-Bacher took the helm in 1979. The grande dame of nouvelle Austrian cooking may have stepped away from the pass, but her mantra lives on through son-in-law Thomas Dorfer. Committed to local culinary traditions, Dorfer forges his own path with well-placed Mediterranean flurries – see roasted pigeon with black olives or charcoal-grilled ragwort with almond cream, pomegranate and pepper velouté. Ten bedrooms provide postprandial respite.
