Once beloved for its fried chicken, it gained gastronomic powerhouse status when chef Lisl Wagner-Bacher took the helm in 1979. The grande dame of nouvelle Austrian cooking may have stepped away from the pass, but her mantra lives on through son-in-law Thomas Dorfer. Committed to local culinary traditions, Dorfer forges his own path with well-placed Mediterranean flurries – see roasted pigeon with black olives or charcoal-grilled ragwort with almond cream, pomegranate and pepper velouté. Ten bedrooms provide postprandial respite.
