Landhaus Bacher
Mautern an der Donau, Austria
Sidestep Vienna's café culture and wind west through the bucolic Wachau Valley to the pastoral delights of Landhaus Bacher. Once beloved for its fried chicken, it gained gastronomic powerhouse status when chef Lisl Wagner-Bacher took the helm in 1979. The grande dame of nouvelle Austrian cooking may have since stepped away from the pass, but her mantra lives on through her daughter Susanne (who manages the restaurant and selects the wines) and son-in-law Thomas Dorfer, while Lisl's other daughter Christina oversees the decor. Committed to local culinary traditions, Dorfer forges his own path with well-placed Mediterranean flurries across the different tasting menus – roasted pigeon with black olives; braised lamb with glazed fennel and Mirabelle plums; charcoal-grilled ragwort with almond cream, pomegranate and pepper velouté; and sour cream pancakes with apricot compote and vanilla brittle ice cream. A table in the pretty, lantern-lit garden elevates the experience even further.
