After Eveline and Walter Eselböck opened the doors of Taubenkobel back in 1984, the restaurant has become one of Austria's gastronomic heavyweights. Under the leadership of their daughter Barbara Eselböck and her chef husband Alain Weissgerber, the restaurant has become a celebration of the Pannonian region, working hand-in-hand with local farms to source ethically bred meats and fish for its signature wood-fired oven. Dishes such as wild-caught turbot from Kvarner Bay, served whole with capers and artichokes, shine a light on the region's outstanding produce, while wild herbs and plants, plucked from the meadows surrounding Lake Neusiedl, brighten the flavours in their homemade pastas.
