Fans of fine-dining will be delighted to hear that the five-star service of the Palais Coburg – the palatial all-suite hotel in Vienna – extends to its restaurant: Silvio Nickol. Here, within ‘60s-inspired surroundings that include a vaulted ceiling and amethyst wall, its namesake chef (who trained alongside German mentor Heinz Winkler) serves up two set menus (seven and nine courses). Seasonal produce is the undisputed star of the show in seriously creative dishes such as Viennese catfish with cabbage, veal and grape; langoustine with bell pepper, beans and chipirones; and lamb with artichoke, gremolata and pecorino. All washed down, as you’d expect, with the most extensive wine menu in the country – fact.
