L'Air du Temps

Éghezée, Belgium

Opened in 1997, L’Air du Temps relocated to its current Ardennes farmhouse setting in 2013, gaining five hectares of grounds in the process. It is this land, with its extensive vegetable garden and greenhouses, that supplies the restaurant’s Korean-born chef Sang-Hoon Degeimbre with many of his ingredients. An understated modern interior is split into several rooms while a terrace offers views out over the open fields. Globally inspired menus contain signature dishes such as Breton lobster with geranium and jangajji (pickled vegetables) of tomatoes, and sweetbreads with langoustine, sauce vierge, herbs and lime – plus dainty morsels aplenty.
