Opened in 1990 by Belgian chef Yves Mattagne, Seagrill won its first Michelin star the following year and a second in 1997, retaining both ever since. Housed within Brussels’ Radisson Blu Hotel, a set of medieval wooden doors grants entry into what feels like another dimension. Modern artworks grace the walls, defined dining areas confer intimacy while smartly efficient staff ensure everything runs like clockwork. Seafood is, of course, the main attraction. Dishes such as char with cucumber, yoghurt and a yuzu dressing, and red tuna lacquered with plum sauce embody dazzling precision and form.
