Willem Hiele’s eponymous Koksijde restaurant has grown organically since the passionate chef first began serving evening meals in his parents’ former fisherman’s cottage. Inspired by the sound of seagulls, the salty air and the rich bounty of the North Sea, ‘The Flemish Viking’ and and his team now serve 40 guests a day. The Seafire menu is replete with myriad fish and game. Guests may also sit outside – from the romantic spots under the cherry trees, the scents from the Willem Hiele herb garden permeate the dishes cooking in the wood oven and on the open fire.
