Willem Hiele’s eponymous Koksijde restaurant has grown organically since the passionate chef first began serving evening meals in his parents’ former fisherman’s cottage. Inspired by the sound of seagulls, the salty air and the rich bounty of the North Sea, ‘The Flemish Viking’ and wife Shannah now serve 30 guests a day. A four-course lunch menu and ‘Small Trail’ (five courses, ‘our culinary happy medium’) or ‘Large Trail’ (seven courses) tasting menus are characterised by lovingly prepared local staples, such as mussels and prawns, bolstered by superior seasonal ingredients from the Hieles’ garden.
