A sculpture of a glass tree references the glass-making tradition of the city of Lommel at this showcase for the experimental cooking of Belgian chef-patron Jan Tournier, but otherwise the wooden floors and grey brick walls ensure that attention is focused firmly on the plate. Tournier is a member of the Flanders Kitchen Rebels, a collective of 64 chefs under the age of 35. Terse menu descriptions are reflected in minimal presentation, with the artistic visuals married to intense flavours on the 10-course dinner menu (four or eight are served at lunch) in dishes which often subvert expectations of temperature and texture.
