Located a few miles out of Kortrijk centre in the town of Marke, this low-key bistro shines thanks to its inviting atmosphere and inventive menu. Here, Flemish chef Martijn Defauw and front of house Tessa D’haene love a juxtaposition: Rebelle offers a generous small-town welcome while plating up bold, attention-grabbing flavours. It’s located in the town's oldest building but inside, the team has resisted the temptation to whip out traditional Flemish design, instead opting for clean lines, muted hues and matte concrete floors. Dejauw’s easy-going menus – offered as three courses, six courses and seven courses dependent on the time and day of dining – regularly reach to Asia for flavour, using locally sourced produce. Seasonal dishes might include roasted duck doused in Szechuan spices, hand dived scallops with a gentle dashi jelly, and wild hare with coffee-glazed beetroot, while the excellent wine list pairs classic with a few unexcepted twists. This is carefree cooking with no pretentions, but Defauw always manages to surprise.
