Housed in an old watermill, with the machinery still visible inside, Slagmolen is Limburg’s fairy-tale fine-dining venue. A smart terrace offers leafy garden vistas while an adjacent villa offers chic guestrooms with Scandi design touches. Opened in 1994 by chef Bert Meewis and his wife Karlijn Libbrecht, menus display a classic sophistication, with dishes such as beef tartare reaching new heights thanks to the passion and integrity of the cooking. The signature dame blanche dessert – vanilla ice cream with whipped cream and warm molten chocolate – should be tried at least once in a lifetime.
