L'Air du Temps

Opened in 1997, L'Air du Temps relocated to its Ardennes farmhouse setting in Liernu in 2012, gaining five hectares of grounds in the process. It is this land, with its extensive vegetable garden and greenhouses, that supplies the restaurant's Korean-born chef Sang-Hoon Degeimbre with many of his ingredients. An understated modern interior is split into several rooms while a terrace offers views out over the open fields. When the weather doesn't play ball, the restaurant's huge glass windows frame the pastoral panorama. The trio of tasting menus (Signature, Supremacy and Exceptional) combine Chef San's deep respect for the land with his Korean roots. Signature dishes include Breton lobster with geranium and jangajji (pickled vegetables) of tomatoes; and sweetbreads with langoustine, sauce vierge, herbs and lime – plus dainty morsels aplenty. Chef San was previously a sommelier before becoming a chef, and much thought has gone into the wine pairings.
