Casa Charo

There was a buzz about Casa Charo before it even opened, thanks to its pedigree: it’s a venture from craft brewer Sukko Stach and the team behind pizzeria and microbrewery Imilla Alzada in La Paz. Taking cues from nature, the restaurant’s decor is white and brown, with wooden furniture bringing warmth to the dining space’s sleek grey floor. On the walls, lamps shaped like strips of fruit peel and giant windows bringing the rolling landscapes in. Written with sparse descriptions, the tasting menu from chef Sofia Nogales is a celebration of seasonal produce from the nearby valleys: pork with sweet potato, or a dessert of blackberry and basil. The region is famous for growing the majority of Bolivia’s apples, so the fruit is of course a frequent presence on the menu. Dishes are paired with a selection of Bolivia’s finest wines, alongside cider, locally brewed beers and sake.
