There's myriad influences at play when it comes to Sach'a Huaska. A Peruvian chef, who trained as a Japanese chef and worked in Trinidad and Tobago, Jaime Barbas is now heading the kitchen at this stylish restaurant and Pisco bar in Bolivia. The menu is a hybrid of sushi and ceviche with an eight-course tasting menu on offer with dishes including smoked fish in a tropical tamarind sauce or a choice of Causes, an indigenous Peruvian dish of mashed potato discs mixed with fish including crab tartare with avocado and pepper. Whether you eat indoors or out on the terrace, you'll be guaranteed an exceptional meal, as the cooking and environment has seen the venue take 90th place on the list of Latin America's 50 Best Restaurants 2022.
