The name is a giveaway, Proyecto Nativa is all about Bolivia's indigenous ingredients - the more obscure, the better. For example, one dish combines smoked pea cream and grilled peas with goat's cheese plus fried lullucha (a bacteria which grows close to freshwater sources on around Cuzco) and grilled Cumanda bark from the Bolivian Huacapurana tree. Don't be fooled into thinking that the concept takes precedence over cooking, though, as the latter is equally as impressive. Guests can take their pick between à la carte and tasting menus, with the tasting menu offering the best value we've come across with seven outstanding courses for under $30 per person. What's more, there are regular guest chef events with luminaries from South America taking control of the kitchen for one night only.
