Thanks to a dedicated farm-to-table approach that includes foraging, chef Manoella ‘Manu’ Buffara’s restaurant was named One to Watch by Latin America’s 50 Best in 2018. Sustainability ranks high on her priorities, and the team works closely with 35 small local producers, including artisanal fishermen, to create an 11-course seasonally paired tasting menu with a strong focus on plant-based dishes. Highlights at the 20-seater establishment include corn macaron with black onion, and lamb with seaweed and custard apple. Many of the beverages are also fermented in-house.
