Thanks to a dedicated farm-to-table approach, chef Manoella ‘Manu’ Buffara’s ranks sustainability high among her priorities, and the team works closely with local producers, including artisanal fishermen, to create a seasonally paired tasting menu with a strong focus on plant-based dishes. Highlights at the 20-seater establishment include langoustines with tomato and horseradish and octopus with peach palm fruit and celeriac. Many of the beverages are also fermented in-house.
