If Manaus is 'the gateway to the Amazon,' Banzeiro is the foyer to its cuisine. Chef and founder Felipe Schaedler brings together flavour, technique and identity, shaped by his extensive research into native Amazonian ingredients, such as those grown and used by Yanomami communities. Over the course of his career, he has built a close network of Indigenous producers in Northern Brazil. Banzeiro's menu is dotted with hyper-regional reinterpretations of classics, all viewed through a distinctly Brazilian lens. Here, you can (and should) savour pirarucu, the crown jewel of the Amazon River and one of the world's largest freshwater fish, its gently sweet flavour akin to cod. Try it coated in tapioca flour and set over a cheese fondue with black rice, or smoked at low temperature with apple wood and paired with a hibiscus and ginger sauce. For another local delicacy, try the more unusual but memorable dish of leaf-cutter ants, their citrussy flavour and delicate crunch balancing well with a milk-smooth foam made from a local root vegetable called mandioquinha.
