In a city famous for its churrascarias (steakhouses), Capincho offers something different: considered, fiercely seasonal food, rooted in Brazil’s far south, that’s seen chef Marcelo Schambeck hailed as a rising star. There are some outstanding 16-hour ribs, in case you’re wondering, but it doesn’t take the menu long to stray into less familiar terrain. That might mean beef carpaccio with rhubarb and watermelon, a crab and Creole corn empanada, or pan-fried chicken hearts with black garlic emulsion, scooped up with a grill-blistered flatbread. Desserts are just as original, often riffing on native fruits; if you’ve never tried jaboticaba or butiá, this could be your chance. Afterwards, decamp upstairs to the low-lit cocktail bar, where co-owner Fred Müller’s inventive drinks are crafted with real artistry, from the smoky Serrana Margarita to the silken-textured Fig Milk Punch.
