The apple doesn’t fall far at Olympe, where fourth-generation chef Thomas Troisgros continues the philosophy of creating nova cozinha brasileira (new Brazilian cuisine) that his influential father Claude brought to the country back in the 1980s. Bridging his French and Brazilian heritage at the Latin America’s 50 Best regular, his five and seven-course tasting menus engage land and sea: think açaí-crusted lamb loin with yucca gnocchis and scallops with tucupi and caviar, water yam and coconut purée. A calm and cosy setting awaits, allowing dishes to speak for themselves. The wine list is excellent.
