The first restaurant from seafood expert Fabrício Lemos and pâtissier Lisiane Arouca, Origem (which translates to ‘origin’) is a love letter to the Brazilian state of Bahia. Menus are inspired by the state’s five biomes, which the pair routinely visit to meet small producers, learn rural traditions and borrow ideas from the natural world. For the full experience, start with a caprioska-cocktail at speakeasy bar Gem (also owned by Lemos and Arouca), before moving next door to Origem’s cool, concrete dining spaces where minimal décor allows the 15-course tasting menu to take centre stage. Although many change daily, dishes tend to be technique-driven with plenty of smoke, texture and specification for your camera to enjoy – before your stomach does.
