In a city where Mexican restaurants tend to be cheap, cheerful and nostalgic, Metzi’s precise minimalism and attention to provenance puts it in a league of its own. Husband-and-wife-team Luana Sabino (who is Brazilian) and Eduardo Nava Ortiz (from Mexico) met while working at Cosme, a landmark Mexican restaurant in New York. Fixed-price menus revolve around classics such as tacos, tostadas and guacamole elevated through additions such as fish roe and endemic Brazilian herbs arranged with tweezers until each dish looks like a piece of sculpture. Their signature mole is unmissable – a symphony of 53 ingredients including fermented cacao, banana and cashew combined over the course of seven days, resulting in a dish of staggering complexity.
