Sweeping up the drive of Langdon Hall in Cambridge, Ontario, feels like you’re time-travelling to when Eugene Langdon Wilks, the great-great-grandson of John Jacob Astor, built the mansion as his summer retreat in 1898. The estate has since been reimagined as a country house hotel, retaining its colonnaded elegance but with all the modern comforts. The dining room is a destination in its own right, with huge windows framing a pond and the Carolinian Forest beyond, while crisp white tablecloths, flickering candles and immaculate staff add to the sense of occasion. Go a la carte or settle in for chef Jason Bangerter’s nine-course The Grand Tasting Menu. Each masterful dish reflects what’s just been harvested from the estate and its surroundings. Lobster is served with just-picked fungi; buttermilk panna cotta is flavoured with citrus from the greenhouse; and a honey crumble comes courtesy of the estate’s bees. There are two wine flights (Langdon Hall has a huge wine cellar) – Globetrotter for the wine curious or the more expensive World Classics, crafted by some of the most respected producers around the world.
